Lemon Meringue 11

Lemon Meringue
1 tin condensed milk 2 egg yolks 2 egg whites pinch salt 1 tablespoon castor sugar 1-2 lemons (according to taste) 1 packet tea biscuits 125g margarine
Pre-heat oven 180C.
Crush up the biscuits. Melt the butter and mix with the biscuits. Press into pie tin. Put in freezer till filling is ready.
Pour the condensed milk in to mixing bowl. Add egg yolks and mix. Add lemon juice to taste. Try to get a good balance between sweet and sour. Take out crust and pour in filling. Bake in oven for 10 - 15 minutes.
Add pinch of salt to egg whites and beat to soft peak stage. Add castor sugar half tablespoon at a time. Spread over pie and lower heat to 140C and bake further untill meringue starts to lightly brown. Then turn off the oven and leave the pie in the oven for the meringue to dry out a bit.
